“Bright straw-yellow colour, pale on rim. The nose is full with an array of green stonefruit aromas along with gooseberry, herb, spice and flinty lees interest, the nose showing good depth. Dry to taste and medium-full bodied, the palate is fulsome, up-front with a robust mouthfeel and texture encasing a complex amalgam of flavours with stonefruits, nectarines, gooseberries, herbs and flinty nuances. The fruit has sweetness and is supported by lively acidity, and the wine follows a firm line that leads to a dry-textured, acid driven finish that opens to show a spread of fruit flavours. This is a fulsome, textural Sauvignon Blanc with an array of stonefruit flavours. Match with seafood and herb marinated poultry and pork dishes over the next 2-3 years. Stainless-steel fermented to 13.5% alc. and 4 g/L RS, the wine spending 2 months on lees.” Raymond Chan, Sept 2014

The winemaking  for the 2014 Sauvignon involved a cool fermentation to preserve the lively aromatics of the variety. The wine was on lees for several month post ferment to add a creamy taste to the palate.
