Deep ruby in color, this Cabernet Sauvignon opens with rich, concentrated aromas of ripe dark cherry, blackberry, cocoa, and sweet spices. Soft, chewy tannins lead to a long, lush finish. Aging select lots in bourbon whiskey barrels enhances the finish of smoke, sweet spice, and cocoa when added to the final blend. 

These grapes were sourced from vineyards where warm days and cool nights provide ideal ripening conditions for grapes to fully ripen and develop varietal flavor. The 2022 vintage was a relatively cool growing season through spring and summer. We quickly started our harvest the first week of September following a record setting heatwave throughout California. Following the heatwave, we picked the grapes during the consistent moderate-to-cool temperatures. They had ripened fully and maintained their natural acidity. The result is deep, concentrated Cabernet Sauvignon flavors.

We start our unique process with Cabernet Sauvignon grapes carefully picked at the peak of ripeness. The wine is then aged and blended to deliver exceptional fruit flavors and complexity. Next, a portion of the blend is selected to be aged for an additional 10 months on new American oak bourbon barrels. Our new barrels give the wine a deep, rich, toasty flavor.

Food Pairing: A superb accompaniment to bourbon-glazed grilled meats, charcuterie boards, hearty pasta dishes, and strong cheeses.
