The nose is full of fresh, floral candied notes from the lightly pressed Central Otago Pinot Noir grapes. The refreshingly dry palate allows the delicate Pinot fruit and classic cool climate mineral acidity to shine through. Reflecting a beautiful Central Otago sunset under which it was made, the pale pink/apricot hues in the glass sparkle and shimmer with sensuous delight.
Made from 100% Central Otago Pinot Noir fruit, lightly pressed to extract just enough colour to deliver the provençal-esque pale pink. Fermented dry to allow the delicate Pinot red fruit characters and cool climate minerality to hop across your palate.
The Central Otago High Country of New Zealand is over-run with rabbits. Sheep and rabbits coexisted on the land for some time but the sheep couldn't keep up with the nocturnal activity of the rabbits. In the end they were hopelessly outnumbered and driven off the land- they were last seen heading north. The owner of the Rabbit Ranch - Mr. MacGregor, tried unsuccessfully to reduce the rabbit population by selling rabbit pies. Eventually he decided to plant some vines and make a decent Pinot Noir to go with all the rabbit pie he was eating.
