The 2021 Tom Chardonnay is a complex wine of great density. Aromas of fragrant citrus and riper stone fruit notes are overlaid with complexities of roasted hazelnut, warm pastry, with a wisp of struck flint smokiness. The palate is full bodied, yet finely structured, carried by a seam of fresh acidity and a slate like mineral edge that combine to give a sense of reigned in power delivered with focus and drive. With careful cellaring we expect this wine to continue to mature gracefully for 6 years or more from vintage date. With age, the wine will develop more complex, savoury nuttiness and will gain breadth and richness on the palate.

"Matured 18 months in (55% new) 90/10% French/American oak barrels. An impressive vintage for St Hugo, leading out with a full, vibrant purple hue. A deep, compact yet bright core of crunchy blackberries, black cherries and satsuma plum hails a great vintage in the Barossa. "Comes from a number of growers throughout the region. There is a real brightness and life in here. It's a more elegant and stylish expression of shiraz than some in the Barossa with a slight ferruginous and linear structure. The south gives generosity and the north gives tannins and blackness. This was a very good year for the Barossa. It's 50% new French and it gets 18 months overall. There's a nice chalky tannin character threading through the mix of predominantly dark fruit with a lift of red fruit character. It has structure and power, and this is a wine that would age beautifully at between 8 to 12 years of age" Ray Jordan, The West Australian
A superb example of classic Barossa Shiraz. Bold, full-flavoured and complex, it offers great depth and silky tannins. Magnificent drinking now but will reward medium-term cellaring.

Pale straw with hints of green. A subtle palate with restrained notes of lemon and lime, and a hint of water running over slate. A delicate nose showing floral characters and lemon blossom.

Rich, dark berry fruit and earthy complexity with lifted notes of sandalwood, cedar, violets, florals thyme and a hint of vanilla. A dense, weighty wine kept in check by firm tannin and gentle acidity with dives exceptional length across the palate.
Food Pairing: Well matched to game and red meats, cured meats and other savoury dishes with robust flavours. Particularly well suited to meats or robust vegetables that have been grilled.

Beautifully fragrant, the wine is built around a core of black cherry and berry fruit, overlaid with beautiful floral and spice notes. The oak is subtle, supporting the wine without dominating the fruit and there is an underlying mineral element. On the palate the wine is medium weight and supple with incredible textural length, combining elegance and finnesse with undeniable presence.
