Cherry, Oak, Spice
This elegant Pinot Noir is perfumed with wild berries and hints of cardamon and cocoa. Its finely structured palate features dark red berry fruit, aromatic spice and earthy flavours. Purity, elegance combine with texture, concentration and length. A true reflection of the Central Otago sub regions that contribute to our Pinot Noir. We’ve timed the release of this wine so you can enjoy it now, or allow to age. Up to 10 years, or beyond if well cellared.
Organically certified Central Otago Pinot Noir - Peregrine Estate Bendigo (50%) and Pisa (50%) sub regions. Favourable early season conditions delivering strong canopy growth lead into settled weather for an even fruit set. The hot dry summer that followed set up an early harvest and great fruit quality.
Up to 18% whole bunch fermentation on selected fruit parcels. Fermented in open top fermenters, mainly pumped over and only plunged during the peak of ferment. Drained and pressed to French Oak barriques. 11 months on French oak, including 22% new oak.
Food Pairing: Duck, mushroom dishes & lighter red meats.
