"Moderately deep ruby-red with a black hue, even colour throughout. The nose is gentle and elegant, with aromas of cherry, blackberry, herbs and delicate spice. Medium-full bodied, aromas of black cherry, blackberry and thyme entwined with black pepper, nutmeg and savoury, earthy elements. Smooth, silky tannins and enlivening acidity frame the dark fruit and herb with poise, lending a long, elegant finish. Medium ruby colour in the glass. Smoky, fruity and savoury; aromas of dark cherry, charred oak, bramble, plum and charcuterie float from the glass. Plump, silky and intensely flavoursome, the palate is brimming with liquorice and black forest fruits- cherry, blackberry, plum and boysenberry- kissed with smoky, toasty oak and a hint of dark chocolate.The tannins are supple and fine, teasing out the long, mouth-watering finish.
Crafted from Pinot Noir Grapes grown at the Pencarrow, Pinnacles & Woolshed Vineyards.Fermented with some whole cluster and wild yeast, before 10 months ageing in French Oak, of which 25% new.
Food Pairing: Enjoy with Peking Duck, Beef Bourguignon or a juicy T-bone steak, medium rare. Delicious now, this will continue to improve through 2027 and drink through 2030.
