"I tried this wine over three days and found the best drinking window to be at the start of day three. The wine needs a little time to open up and reveal its more delicate, floral side, as well as the light oily texture the variety can show. A lovely, clear, brilliant colour with hints of water green. The first nose is very floral (acacia, hawthorn), followed by notes of white-fleshed fruit (granny apple, ripe pear). Good acidity on the palate. The wine is also full-bodied. The white fruits mentioned above are also present.
This cuvée has been made from a very drastic selection between the Mediterranean sea and the foothills of the French Alps and the Massif Central area. In these spots, Viognier is very expressive.
Fermented at a low temperature for two weeks in thermo-regulated tanks in order to keep all their aromatic potential.
