"Lots of mineral and earth smoke with soil scents of stone and clay then fruits of pear and apple, flowers and white spice, a touch of cinnamon and lots of lees. Dry and delicious, a wine of texture and substance, length and flavour. White fleshed fruits white nectarine, apple and pear, medium+ acid line and plenty of length. Pale lemon, with a pinkish hue. A complex perfume of apple blossom, nashi pear, nutmeg, star jasmine and orange zest. Dry and textured with crystalline purity, the palate overflows with spiced apples and pears, finishing long, clean and fresh with a refreshing acid line.
20% of the fruit from the Pencarrow Vineyard, 44% from our organic vineyard Om Santi and the balance from the Woolshed Vineyard.
The fruit is harvested and has 3 hours skin contact to aid in extraction of aromas and flavour. The grapes are gently pressed, tank fermented to 6.7g/litre of residual sugar adding weight.
Food Pairing: Pairs perfectly with Thai or Vietnamese cuisine, as well as heartier winter fare like roast pork with apple sauce.
