Dark purple in colour with red hues. Fresh plums and subtle vanilla oak with hints of violets and floral aromas. The generous, silky palate shows blueberry and plum fruit complemented by soft tannins with hints of milk chocolate and warm spices. Bright fruit flavours linger during the long, succulent finish.
On the sunburnt banks of the mighty Murray River, time seems to flow a little slower. It’s here where the waters glisten with crystal stillness. Where nature’s chorus invites the liveliest silence. Where in those golden hours, at the break and close of day, you can spot twice as many suns shimmering in the sky. Now in the hands of its 6th generation, the Hill-Smith family have stood to preserve this land, its community and the varieties that flourish here since 1958. Whilst the wonders of this land are to be preserved, its fruits are to be enjoyed today, so put your feet up and let the time flow by.
Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for six to seven days. This creates balance between extracting the appropriate tannins for wine structure and retaining fruit flavour and aromatics.
Warmer and drier than usual winter conditions continued to the start of the growing season. This resulted in early budburst and generally lower yields across many regions. Spring and summer remained dry with warm days, flowering occurred evenly with good bunch numbers and cool nights allowed the grapes to ripen with fresh acidity and concentrated fruit flavours.
Food Pairing: Enjoy with a lightly spiced ragù or massaman vegetable curry.
