Straw yellow in colour with greenish reflections, the nose reveals aromas of acacia, peach and green apple. Dry, textural and flavoursome, balanced by fresh clean acidity, with a nice mineral finish.
Produced by the famous Botter family, Ombre is heir to a long-standing tradition rooted in the Veneto region. Ombra – literally, “shadow/shade” - is the word Venetians use to mean a simple glass of wine. The most likely origin seems to be linked to the dominating shadow cast by ‘El paron de casa’, aka the belltower of St Mark’s. Rumour has it that back in the day, St Mark’s Square was dotted by street vendors selling wine. To keep the wine cool, many would take advantage of the shadow cast by the bell tower and would follow it as it turned. In time, the adage “let’s go have a drink in the shade” morphed into “let’s go get a shade”, and the rest is history.
Hand harvested organically farmed Pinot Grigio grapes from the Delle Venezie DOC undergo soft pressing and are then fermented for 15-20 days in thermo-regulated steel vats. Subsequently the wine is aged on yeast lees in tank until bottling. The result is a pure, textural, surprisingly rich dry white wine.
Food Pairing: Ideal as an aperitif, it goes well with seafood appetizers, sushi and shellfish.
