As the wine warms on the palate the fruit core power increases releasing the textures from acidity and polished tannins, weight and spice. On the nose, lifted aromas of ripe cherry, raspberry and plum are layered with hints of wild herbs, spice and a subtle savory note. The palate follows with generous red and dark fruit, true to Bannockburn’s expressive Pinot Noir style, supported by silky, well-integrated tannins and a fresh line of acidity. Refined and medium-bodied, the wine shows both elegance and structure, with depth, length, and promising ageing potential.

Central Otago’s 2024 season unfolded under warm, dry conditions, with settled flowering delivering a balanced crop. A largely rain-free summer produced small, concentrated berries in excellent condition, while a cooler finish allowed flavors to develop steadily and retain freshness, resulting in wines of impressive concentration and structure.

The grapes were harvested by parcel (clone) on flavors and skin ripeness. Each clone was fermented separately a>er undergoing a period of cold soak to enhance color extraction and aromatics. Our winemaking style encourages fruit complexity, texture and balance. The wine was matured in French oak barrels for 12 months, blended in stainless steel for another 6 months before bottling in Spring.

Food Pairing: Great with salmon or game meat such as venison. Dishes like cassoulet or  duck with olives, chargrilled steak, and mushroom risotto.
