Silky-smooth, succulent & lingering
Wine Orbit
Description
- French oak
- Dark cherry
- Almond & thyme
- Silky-smooth
"Attractively fruited and beautifully fragrant, showing dark cherry, raspberry, thyme, almond and subtle savoury notes on the nose, leading to a silky-smooth palate that's succulent and lingering. Nicely framed by fine-grained tannins, making it approachable and enjoyable. At its best: now to 2026" Sam Kim, Wine Orbit, Sep 2021
The fruit for this wine was harvested from a vineyard site on the Martinborough terrace and two sites on the Dry River Flats sub region further south.
After passing over a sorting table, the berries were destemmed into a open top fermenter and inoculated with a cultured yeast. During fermentation, the temperature reached on average 28ºC, and the wines were pumped over once daily, with a daily plunge as the ferment slowed. After approximately 15 days on skins, the wine was pressed into a stainless steel tank where it was inoculated for malolactic fermentation then a portion was racked to several old French oak barriques. After three months of aging in oak, the barrels were blended back into the stainless steel tank and the resulting wine was filtered.
