A light straw coloured Sauvignon Blanc with delicious varietal aromas of ripe passionfruit, peach and gooseberry. The wine is medium-bodied with a palate of tropical fruit, white peach, a crisp lime finish and lingering hints of dried herbs. May be cellared for up to 3 years from vintage.
The grapes for this Mystery wine came from two sites in the Awatere Valley, Marlborough, and were machine harvested in the early hours to minimise heat damage.
On delivery to the winery the grapes were immediately destemmed and the juice cooled. Prior to fermentation the juice was left in contact with the skins for 3 hours before pressing. Fermentation ran at 12-13˚C in tank and the wine was bottled early without malo-lactic fermentation.
Food Pairing: Best enjoyed with contemporary seafood and chicken cuisine, or with Asian inspired flavours.
