Scale_1 - Black Market

Pale lemon yellow. Concentrated aromatic style with rich textural layers. Redolent of Turkish delight, white rose petal, warm spice and zesty mandarin. Supported by a silky palate, reminiscent of warm brioche from the extended time on lees, and with an elegant dry finish. This wine will age gracefully and develop more weight and density over time – worth putting aside for 2-5 years post bottling for this added experience.

Fruit was harvested early in in the morning when still cool and brought directly to the winery to load into the press for some extended skin contact, followed by a gentle press. Free run and pressings kept separate, and the juice was cold settled for a couple of days then carefully racked to ferment tanks. 

Ferments were allowed to tick along at medium cool temps to allow a more textural palate without losing the beautiful floral and lychee aromas. Careful tasting at end of ferment to assess best time to stop ferments was carried out. Once finished, the wines were racked off gross lees, and the lightest lees was gently aerated and returned to wine to allow the wine to mature ‘sur lie’ with twice weekly stirring – again to encourage the textural profile of the wine. Once the textures were deemed in balance, the wine was blended, stabilised and filtered before going into bottle in September 2024. 

Food Pairing: Enjoy with melted cheese raclette, or spicy roast dishes such as Hong Kong Duck.
