"An enticing bouquet of complexity and some intrigue with layers of fruit and leesy qualities interwoven with mineral and fresh pomaceous and citrus fruits. Dry, taut, youthful, crisp and delicious, a wine with varietal intensity, a decent palate squeeze, salivating and with a light saline quality. Well made with a fine layer of complexity driven by ripe fruit, leesy seams and completeness across the palate. Citrus zest and just-cut grass lead the way, layered over the leesy depth this wine is named for. The palate is dry, taut and crisp, with passionfruit, guava and a light saline edge. Six months sur lie brings a soft creaminess and real texture to the mid-palate, carrying through
to a long, full finish.
Fruit was harvested in the cool of the morning to preserve delicate flavours and natural acidity. After gentle pressing, the juice was cool-fermented in stainless steel to keep the aromatics vibrant. The wine then spent six months on its lees, stirred regularly to build mouthfeel, complexity and longevity, before being fined and filtered for clarity and balance ahead of bottling.
Food pairing: A natural partner for seafood: whole baked snapper, grilled prawns or freshly shucked oysters, where the citrus and saline notes come into their own. It’s equally at home with tangy goat cheese salads, asparagus risotto, lemon-roasted chicken and spicy Thai dishes, where the wine’s texture stands up to heat and freshness cuts through richness.
