Dark red in colour with purple hues, the nose is filled with aromas of mint and leather with subtle oak undertones. Lashings of sweet dark berry fruit flavours combine with subtle oak integration and pleasant herbaceous notes. Fine velvety tannins ensure a balanced and long-lasting finish.
The majority of the fruit for this wine was sourced from premium vineyards within South Australia. The continental climate ensured a hot growing season resulting in long sunny days and noticeably cooler nights. The combination of these conditions allowed this vintage to have ideal conditions develop into one of the region’s greatest vintages of the past decade, delivering wines of intense fruit depth and beautiful natural acidity.
Batch 18CAS#05X1 was crushed and de-stemmed where a portion of the wine was transferred onto oak in temperature controlled environments to maximise fruit flavour and retention. Post fermentation, the majority of the wine is matured in stainless steel tanks. The wine is then carefully blended, stabilised and clarified resulting in a balanced and approachable Cabernet Sauvignon.
Food Pairing: This wine is a perfect accompaniment to a rare steak or roast chicken with seasoned vegetables.
