This wine is a sweet, refreshing Moscato with flavours of sweet tropical fruit, lemon and citrus hints. The sweet finish is framed with crisp acidity. This wine presents upfront tropical and citrus aromas with subtle hints of rich sweetness.
The fruit for this wine was sourced from our vineyards in South Eastern Australia. The climate is hot with high evaporation rates and generally low rainfall, making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Long sunshine hours ensure fruit ripens fully and low relative humidity results in little incidence of disease.
The Moscato style of wine is light and fresh with natural fruit sweetness. It features a wonderful mix of citrus and musk flavours. It is lower in alcohol which is achieved by stopping the ferment which also results in preserving some of the natural grape sugars. Picking the grapes in the cool of the night helps ensure the wine stays lively and fresh. Retaining a slight spritz adds an extra dimension and ensures the wine finishes clean and crisp.The fruit for this wine was crushed, de-stemmed and immediately clarified. Fermentation followed at cooler temperature to preserve varietal fruit character. The fermentation was stopped to retain natural sweetness.
Food Pairing: Perfectly served as an aperitif, also makes a wonderful combination with fresh fruit, summer salads or Thai food.
