A blushing watermelon pink in the glass. With an underlying green apple note, this is an aromatic wine with an abundance of fruity esters of summer berries – strawberries, raspberries and cherries. burst of flavours on the palate brings a combination of ripe berry fruit to the fore, balancing well with a small amount of residual sugar from the fermentation and a refreshing acidity. This gives a wine of great flavour intensity and length, the flavours of which linger in the mouth, ideal for the spring and summer months.
100% Waipara, North Canterbury. With rainfall twenty-five percent less than normal and an increase in heat becoming typical of the North Canterbury climate, this 2020 vintage fruit was picked in excellent condition, ensuring exposure to disease was greatly minimised. This has resulted in intensified fruit flavours providing a lovely balanced wine.
Assessing for maximum flavour during the grape growing season, the winemaker harvested the fruit at optimal ripeness. To help extract the pale pink hue, the grapes were pressed then keeping the skins in contact with the juice overnight. Fermentation at low temperatures to optimise the preservation of the aromatics took place following the cold settling process which clarified the juice overnight. The South of France provided Rosé yeast was used for the fermentation process with a balanced amount of residual sugar left in the wineto complement the acidity and to add palate weight and structure.
