Rich, bold, and unapologetically indulgent, the 2023 Arsonist Chardonnay is a masterclass in balance and elegance. The striking green-straw hue invites you into layers of opulent flavors—butterscotch, warm caramel, and creamy custard. On the palate, this wine is lush and buttery, coating the mouth with its luxurious texture while a crisp apple note cuts through, keeping things fresh and lively. The bright, clean finish lingers. Not subtle, not shy, this is a Chardonnay with character.
We harvest our Chardonnay clones 4 and 124 (Dijon) at night. The estate fruit went from vine to crusher in less than 30 minutes, arriving well before sunrise to ensure the fresh, fruit flavors were preserved. A carefully chosen yeast cocktail—our winemaker’s hand-selected mix – ensures that complex fermentation characters evolve. The wine was fermented and aged in a selection of American and European oak including grand, towering Foudrerie Francois barrels, where it takes on those signature notes of butterscotch and toasted caramel. Five percent ferments in cement eggs, an old-world nod to purity, allowing the fruit’s vibrancy to shine through. Every barrel goes through malolactic fermentation, coaxed along with nine months of dedicated stirring to build texture and richness. The best 10%—the true standouts—earn an extra five months of careful aging, stirred and scrutinized until only the nest half make the final cut. The result is a Chardonnay that is both bold and finessed, rich yet fresh.
Food Pairing: Perfect alongside grilled pork chops, seafood in butter sauce, or simply on its own as a moment of pure indulgence.
