This is a sleek and stylish sparkling wine. Finely textured with baked crumble and crusty bread characters, layered on a tight, snappy palate with taut acidity, lovely concentration and a long finish. A packed aroma showing baked apple, lemon sherbet, sourdough, red berries, fresh cashews and toastiness. Clear, pale gold tint with a fine bead.
The LV Methode Traditionelle has been made very much by following the traditional winemaking wisdom of the Champagne region. Grapes were hand harvested and
whole bunch pressed on a gentle Champagne press cycle, with only the first 500 litres per tonne used. The base wines underwent 100% malolactic fermentation, coinoculated in the primary ferment. Blending trials determined the ideal proportions of Pinot Noir, Chardonnay and prior vintage wines. The tirage bottling was in Spring. These bottles then lay on their sides, untouched, until disgorging around 2.5 years later, allowing the yeast autolysis to add complexity and texture to the wine. The bottles were disgorged in late May 2018. Dosage was 5.5g/L. This collection of wines has been made in a stylistically bold manner. The focus is on purity, texture, concentration and longevity, with a hell of a lot of personality!
Around 60% Pinot Noir from an organic block within 3km of the winery on old Vavasour family land. Balance Marlborough Chardonnay. Loess loam over fine gravels / Silt loam and alluvial gravel.
