Description
Apricot, Dry, Vanilla
"Beautifully fruited and elegantly fragrant with aromas of green rockmelon, Asian pear, lemon peel, and white flowers. The palate displays juicy fruit flavours, a silky mouthfeel, and well-pitched acidity, finishing long and refreshing. At its best: now to 2028" Sam Kim, Wine Orbit, Jun 2026

Clear and vibrant with a pale white-gold hue. Fresh aromas of nashi pear, white peach and crisp apple are layered with delicate blossom florals, subtle spice and a gentle mineral edge. Hints of ripe mango and citrus add brightness and appeal. The palate is fresh, finely textured and beautifully balanced, with cool-climate acidity bringing energy and precision. Flavours of pear, nectarine and ripe citrus flow through to a long, refreshing finish with lingering minerality.
The 2025 vintage was the harvest our region had long been anticipating—both abundant and of exceptional quality, a combination we hadn't seen in years. Remarkably, we navigated the critical spring periods of frost and flowering without major incidents, setting the stage for a promising crop. December brought warm temperatures and low rainfall, but January threw us a curveball with a fierce southerly front that delivered two weeks of cold, wet weather right in the heart of summer, leaving us scratching our heads! Fortunately, late January saw a return to normal temperatures and minimal rainfall. By April, we enjoyed above-average temperatures and a typically long, settled autumn. Overall, 2025 was EXCELLENT. The wines promise to be fully flavoured and beautifully balanced—ones to watch for in the coming years.
The grapes were meticulously grown and harvested from the clay and limestone soils of Bluerock Vineyard. Each bunch was destemmed and transferred to the press for skin maceration, which allowed for the gentle extraction of ripe phenolics, flavour compounds, and tannins. The pressing process was careful yet thorough, applying up to 2 bar of pressure without separating any “hard press” juice. After pressing, the juice was chilled, and a small quantity of bentonite was added to clarify it prior to fermentation. Fermentation occurred in a blend of old French oak barrels and temperature-controlled stainless steel tanks, ensuring a balanced development of flavours. Following fermentation, the wine was matured in our winery for 8 months before bottling, allowing it to refine and integrate beautifully.
Food Pairing: Pork belly bao.
