Description
Dry, Pastry, Pear
"Bright, even, pale yellow. The nose is softly full, with aromas of white floral, apple, pear and a hint of biscuit dough. Medium-full bodied, dry to taste, aromas of apple and pear melded with white blossom, spice, and a touch of biscuit dough. The fruit shows good intensity and purity, subtle biscuit dough nuance and spice contribute to interest and elevate a lingering finish" Candice Chow, Raymond Chan Reviews, Feb 2025

"Pungent, ripe, fruity and varietal with core aromas of tropical fruits and citrus. Layers of lees and fruit spice, fresh herb and peach add depth and breadth to the bouquet. Crisp, ripe, fruity and taut with salivating acidity, a saline note and flavours that reflect the bouquet. Well made, youthful and dry, a wine ready to drink from December 2024 through end of summer 2027+" Cameron Douglas, Master Sommelier, Oct 2024
Pale lemon. Pure and delicate aromas of fresh pear with a hint of spice. Elegant with fresh white pear, delicate pastry and tasty savoury notes. The palate is textural and well structured. Enjoy now and over the next 3 years. If it makes it past the time it takes to chill we’d be impressed.
The majority of fruit is harvested from the mature vines of our Talon block located in the famously fertile area of Dillon’s Point known to produce outstanding Sauvignon Blanc.
Pressed immediately following harvest to minimise skin contact and retain freshness, then cool-fermented at 14+ degrees to maintain rich aromatics. This Pinot Gris sat on lees for 2-3 months post fermentation to further develop in flavour.
