"The bouquet instantly reveals complexity built around site then vintage, a core of ripe grapefruit and stone fruits, fresh red apple and layers of fine lees. A secondary layer of barrel spice adds depth and intrigue. Dry, textured and delicious on the palate. On the nose, the wine is open and expressive with notes of apple, pear and a touch of custard. There’s a genuine impression of a warm apple pie, fresh out of the oven here. This carries through on the palate, with the orchard fruit notes joined by a hint of just-ripe nectarine, subtle vanilla, and framed by an appleskin phenolic grip and balanced by freshening acidity.
Grapes sourced from the Wrekin Vineyard. No herbicides, pesticides or systemic fungicides used. Only approved natural fertiliser applied. All vineyards certified organic (BioGro).
Hand-picked March 31st and 2nd of April. Hand picked fermented using “wild” and cultured yeast. Matured for 12 months in a combination of 228 and 600 litre French oak barrels (10% new) with a portion in stainless steel to preserve freshness.

Food Pairing: Chardonnay is a classic that can pair with many dishes, but definitely consider white meats and more robust fish dishes. The bright acidity and minimal oak character here means that it will also pair well with higher acid ingredients such as tomatoes and citrus. Our favourite, seared sustainably-caught sesame-crusted tuna, served with pickled cucumber and fresh sugar-snap peas.
