Grapes from each vineyard are picked as late as possible, when the flavors start to get interesting, without becoming completely overripe. One parcel of fruit was given extended time on skins to impart texture and flavor. Fermentation is carried out in a mixture of stainless steel (85%) and old French barrels (15%).
Food Pairing: Rich pork dishes, or roast chicken and salmon.
