Fincas de Azabache is a state-of-the-art cooperative founded in 1956 in Aldeanueva de Ebro (Rioja Oriental), now farming 3000ha of family-owned vineyards at the foot of Mount Yerga between 350-600 metres above sea level. The extreme continental climate (hot days, cold nights, very low rainfall) and alluvial/ferrous-clay soils make organic viticulture natural and deliver concentrated, characterful fruit. A brand-new high-tech winery (completed 2015) and the guidance of one of southern Rioja’s most respected winemakers, Martín Sáez Palacios (35+ years’ experience), ensure precision and purity.
This wine is made from specially selected 50-year-old Garnacha wines located in the sun-soaked mountains of Yerga. Harvesting beings in the first half of October; this is when ther grapes have reached their optimum phenolic ripeness. Fermentation then takes place in temperature-controlled tanks that range 26-28 degrees. The wine undergoes regular pumping over in order to ensure that the maximum amount of colour and aromatics are extracted. Aged 12 months in French and American oak barrels.
Food Pairing: great with grilled chicken, pork and even game and hard cheese.
