The Echo Sauvignon Blanc 2021 is fruit driven with refreshing acidity and a lingering mineral finish. Beautiful lifted aromas of gooseberry and passionfruit with an expressive palate of crushed oyster shell and sea salt.
The fruit for this wine came from select vineyards across Marlborough including the Wairau Valley.
The fruit was carefully monitored throughout maturity and was harvested upon reaching optimum flavour development and ripeness. It was then fermented at cool temperatures in 100% stainless steel to retain the fresh fruit characters.
Food Pairing: A perfect match with fresh seafood or on its own as an aperitif. Drink now or at its best over the next two years.
