A good choice food wine on the palate with firm tannins and plenty of acidity to melt into high protein dishes or cheese. Warm, enticing blueberry aromas frame luxurious mocha chocolate, cedar spice, plums and blackcurrants. Plum and berry compote, roast vanilla and boysenberry with hints of mocha chocolate complement the rich, velvety finish.

When a group of local families decided to bring their grapes - and over 230 years of winegrowing expertise - together, something very special was born. Founded by families and grown across generations, harvesting the benefits of individual wine wisdom - there’s more to this drop than meets the eye. One only need scratch the surface and discover the stories underneath. Dig a little deeper, and discover earthworks.
Good winter and spring rains provided the vines with plenty of moisture to start the growing season. Spring was warm to mild with favourable conditions other than some isolated hail and frost. Despite windy weather at flowering the vines set a medium sized canopy and crop. Summer and autumn were cool to mild and dry. This long, slow ripening was ideal for achieving wonderful flavours in the grapes.
Cabernet Sauvignon grapes sourced from our Barossa growers are carefully destemmed and crushed into fermenters, where they are gently macerated. Cool fermentation temperatures enhance the rich and generous fruit flavours and soft tannins enjoyed in this wine. Matured with a selection of French, American and Hungarian oak for 12 months prior to blending and bottling.
Food Pairing: Homemade saltbush lamb sausage rolls or cherry tomato and tapenade tartlets.
