The rich blue and darker fruit aromas are flanked by notable inclusions of ferrous sweet earth, smoked smallgoods and a floral lift. Ripe and dense fruit that dips into tapenade and licorice. A strong line of freshness runs through the wine.

Our Sparta vineyard was planted around 25 years ago on a north facing hillside on the western boundary of our property. The style is bright, rich and full bodied.  The vineyard is surrounded on all sides by Kalamata and Koroneiki olive trees that we process into table olives on the estate. There is a further Greek connection as the property was originally owned by a Greek family who originated from the countryside surrounding Sparta in Greece. 

Food Pairing: The suits food that leans into the smoky, iodine and ferrous notes. A project for the weekend grill, start with grilled whole squid with garlic, olive oil and silverbeet, and continue the party with slow-roasted lamb with anchovy, rosemary and green olives.
