Amazingly silky with smooth tannins, the 2021 Ohiti Cabernet Sauvignon exhibits blackberry, cassis, boysenberry, cigar box and ripe tannins. It is a classic Cabernet Sauvignon from a vintage year. Vibrant fruit, oak and tannins are interwoven to form a rewarding tapestry of flavours.
Ohiti Estate lies in an inland heat trap on the bed of the old Ngaruroro River. Trained on classical VSP trellis system, on gravel soils, Cabernet Sauvignon obtains excellent levels of ripeness, with good colour intensity, clean fruit, and ripe tannin development.
Grapes were harvested on the 9th of April, 2021 (thus reflecting the summer heat) and fermented using traditional Bordeaux pump over methods for cap management. Time on skins was three weeks. Malolactic occurred after pressing, prior to going to oak.
