"A vibrant and fruity bouquet with aromas of green pear and quince then lees and earth-smoke suggestions of stone. Youthful and new with an enticing varietal core. A dry wine on the palate with warmth and generosity, a satin touch and fruit flavours to match the bouquet. There’s a light white spice quality, some tension and poise releasing to medium + length. Pale straw. Pear, ginger with a hint of orange blossom. Wrapping mouth feel, fine acidity giving length to finish.
The juice was separated to free run and press portions and cold settled. The free juice was then racked off solids and filled to tank for temperature-controlled fermentation with an aromatic yeast. Press juice was filled to seasoned French oak puncheons. Post fermentation held on light lees to impart additional palate texture, minimal fining prior to bottling.
