"Ripe, fleshy, varietal and pure fruited bouquet showcasing aromas of white spice an green pear, white flowers, apple, a lees and a whisper of ginger spice. Inviting, fresh and youthful. Warm and generous on the palate with flavours of pears and elderflower, lees and white spices then white fleshed tree fruits and a touch of pith. Pale straw in colour. Aromas of Nashi pear with a hint of orange blossom and struck match, flinty complexity. Off dry on the palate with a wrapping mouthfeel, soft acidity giving length to the finish.
Selectively hand-picked from their Black Barn home block. Gentle pressing followed by overnight settling of the juice. Fermentation of the free run juice was at controlled temperatures in tank with an aromatic yeast strain. The press juice was fermented in seasoned French oak puncheons. Post fermentation held on light lees to impart additional palate texture, minimal fining prior to bottling.
Their philosophy is to make artisan wines that are food friendly, have texture, palate interest, and balance.
