Deep ruby with a tawny hue. On the nose, char-grilled green bell pepper leads the way, joined by blackcurrant and olive tapenade. Notes of tomato leaf and a delicate touch of sour cherry intertwine seamlessly. This is a Cabernet with a distinct personality – bold and robust. On the palate, a different chapter unfolds – one that is more approachable and inviting. The palate is accompanied by a vibrant juiciness, and the unripened notes fade gracefully, giving way to the warmth of baked spices – black pepper, nutmeg, and sandalwood.
Beresford wines capture the elegance, powerful complexity and unique essence of McLaren Vale, resulting in wines of great balance and depth. This Cabernet Sauvignon shows lifted, fresh characteristics of blackcurrant and violets. Vanilla, primary raspberry and plum fruits, cherry with an underlying hint of spice.
Sourced from the Beresford Estate Vineyard in the cool sub-region of Blewitt Springs, the grapes were harvested on both colour and flavour development then crushed and fermented for 7-10 days at approximately 24 degrees. Small open top fermenters are used with hand pumping over and rack and returns to ensure optimum extraction of flavour, tannins and colour is achieved. The ferment is then softly pressed using an airbag press, producing a balanced style of wine. Further complexity is developed with 20% of the blend receiving 14 months of maturation in seasoned American oak hogsheads and 10% in new 3 year seasoned French oak. The balance of the blend is matured in 2 and 3-year-old French oak hogsheads. No animal products are used for fining or filtration. Vegan Friendly.
