Aromas of sun-warmed cherries, Doris plums, spiced cinnamon, and cloves with underlying savoury notes. The full and vibrant palate reveals a concentrated and fruit-forward core of fresh cherries and blackcurrants, balanced by warm, supportive, sweet vanilla oak and silky fine-grain tannins, before finishing with an elegant, balanced freshness.
Grown in Central Otago elevated glacial terraces with seams of greywacke, schist alluvium and overlying shallow Manuherikia fine sandy loam.
Handpicked fruit is gently destemmed and crushed to small format open top fermenters. A short 2-3 day cold soak to maximise colour and flavour extraction. The fruit was gently plunged during fermentation to release the fine berry fruits and spice characters before being gently pressed to new and seasoned French oak, and stainless steel tanks for 11 months further maturation, before blending and bottling.
Crafted at Gravity Winery via the ancient gravity-fed process to guide the wines to their fullest expressions. Each of the winery’s four levels serves as a stepping point in the gentle gravity fed winemaking process. From harvesting to fermentation to barrel, the wine is barely touched before it is bottled.
