A subtle pink colour, Cecilia Rosé is a complex but elegant Rosé. Dry, crisp and refreshing it shows an array of wild summer fruits, such as ripe strawberries and raspberries. The focused acids lead to a mouthwatering fruit finish. The bubbles enhance the aromas on the palate making this a very fitting drink for the summer months which is equally delicious throughout the rest of the year.
A sophisticated Methode Traditionnelle style wine made from predominantly Chardonnay blended with Pinot Noir. The chardonnay grapes are picked, lightly pressed and fermented to absolute dryness. Following primary fermentation, wild malolactic fermentation is encouraged. The Pinot Noir grapes are very lightly pressed, following the same process as the chardonnay grapes. After 10 months the wines are carefully blended and bottled. After 18 months of aging the wine is disgorged removing the yeast and dressed for sale.
Food Pairing: Cecilia Brut can be enjoyed anytime, whether for a celebration or to share with friends as an aperitif before a meal. Try matching with a creamy chowder or a beautiful brie.
