Description

Blackberry, Oak, Vanilla

"Complex and inviting, the wine shows dark cherry, cured meat, warm spice, and dried mushroom aromas on the nose. The palate delivers succulent fruit flavours with silky texture and polished tannins, offering excellent structure and length" Sam Kim, Wine Orbit, Jan 2025

"A ripe and fruity expression with a core of varietal flavours including plum and cherry framed by baking spices and a gentle wood smoke combination. Balanced and well made with textures from fine through moderate impacts of tannins and acidity. There’s touch of lavender and dried herb on the finish adding to the length and complexity. Best drinking from day of purchase through 2028" Cameron Douglas, Master Sommelier, Jan 2025

"Deep, dark ruby-red, even colour throughout. The nose is softly full, with aromas of strawberry, raspberry, spice and sweet floral. Medium-light bodied, aromas of strawberry and raspberry jam melded with cinnamon and sweet floral. The forward, ripe fruit flows with lively acidity and supple tannins, lending a silky, elegant closing" Candice Chow, Raymond Chan Reviews, Feb 2025

Dark colour, with ruby tints. This Pinot Noir has scents of red and black berries mixed with floral notes, hints of delicate wood and vanilla. The palate is complex, rich, long with aromas of blackberry, blackcurrant, cherry and jam.

Abbotts & Delaunay varietal wines are fruit forward, easy drinking and elegant wines from the Pays d’Oc that are the perfect complement to our AOC collection. Thanks to work in the vineyards that respects the soil and the vines, we are able to harvest healthy,  concentrated grapes as well as take care to preserve the wild plants («Fleurs sauvages» or «Fruits Sauvages») that border them.

Cold pre-fermentation maceration (about a week). One week's fermentation at controlled temperatures. 25% of the final blend is aged in oak barrels for 6 to 9 months.

The grapes for this wine come from terraces on the height of the Aude Valley, in the foothills of the Pyrenees. Clay and limestone soils. Cooler climate, milder temperatures and rainfalls. 10-year-old vines pruned using the "cordon de Royat" (trellised) and "Guyot" (trellised) methods. Relatively low yields (50 hl/ha).

Food Pairing: Serve at 17°C with charcuteries, white meat, chicken with a cream sauce and light cheeses.
