This wine is a deep dark red with purple hues, leading to the generous aromas of blackcurrants, sweet liquorice and cinnamon spice with a hint of blackberry seed. A delicious ripe palate with crunchy black fruits and silky sweet tannins finish out this wine.
Working with the loyal Clare growers this wine is a blend of multiple vineyards throughout the Valley.
2019 was a challenging growing season due to the drier than average winter and Spring. Careful and diligent irrigation scheduling and vineyard management was required to ensure full leafy canopies that protected the fruit from the heat experienced during Summer.
Selected Shiraz parcels where fermented in small batches from the various vineyards for 8 to 10 days. A long, cool ferment ensures the maximum vibrancy and freshness is maintained with the wines. The wines were then pressed to stainless steel tanks to complete secondary malolactic fermentation, followed by maturation in tanks for freshness, with a small percentage seeing some French and American oak. A light fining was done to enhance plate softness and then bottled with minimal filtration.
