Very pale salmon, in the classic light Provençal style. Undeniably pretty and pristine on the nose, it’s a bed of rose petals and a punnet of strawberries, with crushed raspberry, Scottish shortbread and just a hint of dried Italian herbs. Crisp, dry and impressively weighty for such a fragrant and pretty wine, the mid-palate is full and rounded, a whisper of textural grip from the skins and a vibrant acid line driving a long, mouth-watering finish. Fun and serious in equal measures, this is Palliser Estate’s take on the Provence style.

100% Pinot Noir, Clones 115 and 5 from our Pencarrow and Pinnacles vineyards. Crushed to press with gentle extraction and fermented to 5g/L residual sugar. The wine spends 3 months on lees for added complexity and texture.

Food Pairing: Perfect when paired with salmon, cold cuts, feta salads or canapés, this is a wine to enjoy in its youth, though a few years ageing through 2023 will only reveal more layers.
