This wine is a blend of Villa Maria’s Gimblett Gravels vineyards, where the free draining soils are a huge benefit in wetter vintages as the soil doesn’t retain moisture, allowing for low yields of ripe and concentrated fruit.\u003c\/p\u003e\n\u003cp\u003eThe fruit was picked and gently destemmed without crushing into open-top fermenters for fermentation with daily plunging to extract flavour, colour and tannin.
