The fruit is sourced from free-draining, cool-climate Marlborough sites, where moderate daytime temperatures and cold nights encourage slow ripening and naturally lower potential alcohol. This allows us to harvest based on flavour development, capturing a range of bright aromatics and fresh acid profiles. The distinctive Marlborough character comes from multiple vineyard parcels, each managed to provide diverse blending components. After harvest, the grapes are gently pressed, the juice settled, and individual parcels fermented with selected yeasts to build complexity and typicity. To craft the low alcohol style, we select wines that already show vibrant Sauvignon Blanc character at lower alcohol levels.
