Estate Pinot Noir ’25 was harvested between 25 and 26 February 2025 from Te Mata Estate’s own Woodthorpe Terraces vineyard in the upper Dartmoor Valley.\u003c\/p\u003e\n\u003cp\u003eThe individual lots were each destemmed, cold soaked followed by a traditional plunged fermentation. The resulting wines underwent extended maceration on skins before pressing. The separate wines were then run to a mixture of new and seasoned French oak barriques for 11 months’ maturation.\u003c\/p\u003e\n\u003cp\u003eFood Pairing: Estate Pinot Noir ’25 pairs with herb roasted duck breast with cherry and thyme jus or a wild mushroom and thyme risotto.
