Parcel selection in the vineyard enabled timely picking of bright, sweet-fruited berries that are perfect for the soft and fruit driven wine style being crafted.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tSourced from a number of vineyards in South Australia and Victoria enabling a selection across a number of microclimates. Each providing a good blend of vibrant, expressive fruit focusing on fruit purity and aromatics. Primarily hand-picked before vinification in a combination of large open fermenters and steel tank. After a cool fermentation the process is ceased to ensure a light touch of fruit sweetness remains to support flavour and mouthfeel.
