Cooling afternoon ocean breezes extend the growing season, providing fruit concentration.\u003c\/p\u003e\n\u003cp\u003e2026 rewarded preparation, precision and pace. After a cooler mid-season slowed ripening, fine autumn conditions unlocked outstanding flavour development and balance. Careful vineyard stewardship and a coordinated harvest ensured every vineyard was picked at it’s optimum ripeness, producing wines with remarkable purity, concentration and a vibrant sense of place. Dillon’s Point Sauvignon Blanc was harvested exactly when we wanted with ripe fruit characters, then gently pressed. We used a variety of yeast strains for fermentation in stainless steel, chosen to enhance palate weight. Warmer ferment temperatures are used, which enhances mouthfeel and the trademark thiol characteristics unique to this sub-region.
