Organic since inception in 1991, we produced New Zealand's first certified organic sauvignon blanc and pinot noir wines.\u003c\/p\u003e\n\u003cp\u003eBeautiful ripe Clone 15 and 6 fruit was handpicked. Grapes were whole bunch pressed. Juice was transferred into French oak barrels (15% new) where it naturally underwent wild yeast ferment the remainder was fermented in steel tanks with oak staves. The wine was stirred on its lees to add texture complexity and aroma. The wine went through malolactic fermentation to soften acids and add a rich character to the wine.
