Slightly reduced yields gave way to excellent quality and depth. The fruit is sourced from a vineyard in Maraekakaho, set on ancient river terraces with sandy, volcanic soils. Warm days and cool nights allow for slow, even ripening, producing fruit with vibrant flavour, balanced acidity, and fine structure—true to Hawke’s Bay’s distinctive terroir.\u003c\/p\u003e\n\u003cp\u003eLow-yield Merlot was de-stemmed into mixed fermenters and warm-fermented with regular pump-overs for balance and elegance. After skin contact to build structure, it was pressed, settled, and racked to stainless steel for malolactic fermentation.
