Each parcel was monitored and tasted throughout the season until the berries had reached the desired flavour profile.\u003c\/p\u003e\n\u003cp\u003eAt the winery each parcel was cold soaked before fermentation, enhancing the colour and flavour extraction for the wine. The juice was fermented and hand plunged eight times a day during its peak. Once ready, each batch was racked into stainless steel tanks with French oak where it underwent a malolactic fermentation.
