A dry spring with settled weather during flowering set up a good crop ,and after some much needed rain at Christmas, the season settled into a long cool dry ripening period, perfect for Sauvignon Blanc. We started harvesting clean ripe fruit in mid March and concluded in mid April with stunning weather throughout. Our spread of vineyards down the river valley provide a broad palette of classic Sauvignon flavours. These naturally low yielding vineyards, with moderate canopy growth always give concentrated fruit with ripe acidity.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eIn the winery the fruit is pressed and the juice clarified and cool fermented with a range of yeasts to express complexity of aroma and texture.
