The fruit for this Riesling comes from a blend of our Rina Rose and Templars Hill vineyard which consists of Lochar top soil over fine to moderately coarse gravels.\u003c\/p\u003e\n\u003cp\u003eOur Dry Riesling attempts to balance flavour and palate weight with the wine’s natural acidity. Hand picked fruit was brought into the winery during the cool morning. Half the fruit was crushed and pressed to extract flavour and texuture, while a smaller portion was whole bunch pressed to retain acidity. After settling the juices were blended, with half heading to tank for inoculated ferment, while the other half was wild fermented in a concrete egg. Once balance was reached with sugar, the wine was chilled to stop fermentation.
