Cooler mid-summer conditions slowed sugar accumulation, allowing flavours to develop gradually while preserving natural acidity.\u003c\/p\u003e\n\u003cp\u003eFruit from our Fareham Lane vineyard was harvested in excellent condition and fermented in small open-top vessels. The wine was then gently pressed and matured for 10 months in French oak barriques (35% new, 65% seasoned).
