In producing our delicious, Organic wines we support the families who sustainably farm these vineyards.\u003c\/p\u003e\n\u003cp\u003eProduced from organically farmed old vineyards in Castile. The continental climate, with sunny days and cool nights, allow us to achieve intense fruit and excellent varietal definition, while retaining remarkable freshness. The Organic Grapes are picked at night and in the early morning hours and shipped quickly to our state-of-the-art winery for a short prefermentative cold maceration, followed by pneumatic pressing and fermentation in stainless steel at around 16oC to preserve fruit character. Malolactic fermentation is prevented by chilling.
