The Grenache and Syrah are planted in clay-limestone plains and cultivated to achieve yields of around 50 hl\/ha.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe grapes are entirely de-stemmed and placed in temperature-controlled vats to macerate for around 15 days with only pumping-over operations, after a cold pre-fermentation maceration.
